Pork Chop Almond Butter Satay

I know what you're thinking, almond butter and pork? You probably don't realize, but a traditional satay is made with a peanut based sauce. I just like to replace the peanut with almond butter. Add in a few other traditional Asian flavors and you can create a super simple healthy dish. This is another good last minute meal. You could use this marinade on chicken if you prefer, or even veggies if you want a vegetarian dish. I would use broccoli, cauliflower, tofu, onions, and cabbage. I think the would all be delicious with this marinade.

Pork Chop Almond Butter Satay
GF/DF

Ingredients:

1 T GF almond butter
1 1/2 T GF soy sauce
2 T olive oil
1 T red wine vinegar
1/4 t garlic powder
3-4 sprigs fresh thyme
2 boneless pork chops (I used butterflied)

What to do:

Preheat your oven to 350°.

 Add the first 6 ingredients in a medium bowl.

Mix together until the almond butter is smooth and all ingredients are are mixed well.

Add in your pork chops and cover the pork chops on both sides with the marinade. Let sit for about 20 minutes for the flavors to marry into the meat. 

Transfer your pork chops into a small baking dish. Make sure you scrape all of the marinade out of the bowl into the baking dish. 

Bake at 350° for approximately 30 minutes, or until the pork chops are done all the way through. 



I served our pork chops with some rice and a side salad.
