The perfect afternoon snack

Why is it that every afternoon between 3-4 I want a snack! Whoever made the rule lunch should be at 12 and dinner shouldn't be until 7 was out of their mind! I mean really, who can make it that long??? Not me! So to curb my hunger, I decided to whip up some guacamole. It is full of healthy fats, and absolutely delicious. So here is my quick guac recipe for you! Hey you could always serve this with my taco recipe!!

Emily's Quick Guacamole


Ingredients:


3 ripe Haas avocados
1 small red onion
1 tomato
2 cloves garlic
1 jalapeño
1 t ground cumin
salt and pepper to taste
juice of one lime (if they are small you may need 1 1/2)


Dice your onion, jalapeño, tomato, and garlic.





Slice your avocado in half, length wise.


Twisting in oposite directions, separate the two halves.


Using a steel knife, gently tap your knife into the pit so it sticks. You do not want to cut all the way through the pit.


helpful hint: DO NOT use a ceramic knife for this step, it will chip your knife!





Holding the avocado still, gently twist the knife and the pit will come right out! Make sure you keep one of the pits!

Using a spoon, scoop out the avocado insides into a bowl.

Add in your remaining veggies and seasonings.

Squeeze in your lime juice.

Using the back of a spoon, stir ingredients together and slightly mushing the avocado. I like mine a bit chunky so I prefer to use a spoon. 



helpful hint: If you like it a bit smoother, you can always toss the ingredients into a food processor and pulse until desired consistency. 

If you are eating right away, go ahead and make a bowl with your favorite gluten free crackers or chips!! These are two of my favorites!



If you are making ahead of time, be sure to put one of your avocado pits in the guacamole to prevent browning.


When covering with plastic wrap, press the wrap down into the bowl so it is touching the guacamole and is airtight. This will also help to prevent browning. Toss in the fridge until you are ready to chow down.
