Simple Fruit Salad

As this week begins, I have healthy eating on my mind. I have been wanting lots of fruit lately but I am tired of just grabbing an apple, or tossing some blueberries in my mouth on the fly. Today I have for you my favorite simple fruit salad. I like to grab my favorites and from time to time I like to mix it up a bit. Total you need about 6 cups of fresh fruit. Doesn't have to be exact!

When you are focusing on healthy eating, it is helpful to keep quick healthy options in the fridge. If you have a beautiful bowl of cut up fruit staring at you when you open your refrigerator, you are more likely to grab that option. 



The dressing I add to my fruit salad is very simple and doesn't have to be precisely measured. This is one of those eyeball it recipes. I like to use greek yogurt in this recipe, but you could always grab soy yogurt to make this recipe dairy free.

Simple Fruit Salad

Ingredients:

1 orange
1 apple
about 6 large strawberries
about 1 cup grapes
1/2 cup greek yogurt
3 T honey
zest of an orange
1 t poppy seeds 


What to do:

First things first, make sure you wash all of your fruit well.

Slice and chop your fruit. (I like to leave my oranges in the natural slices and my grapes whole)




Add your fruit to a large bowl and set aside.

Grab a medium bowl and add in the yogurt, honey, orange zest, and poppy seeds.

Stir to combine.

Pour the dressing over your bowl of fruit and mix well. 


Cover with plastic wrap and refrigerate for about an hour before serving.

Give the salad a stir before serving. Sometime the dressing likes to settle at the bottom of the bowl.

Gluten Free Pasta Salad

Happy first day of May friends!! 

I am always searching for easy lunch ideas for Hubs. The other day we were in the grocery and he picked up one of those pre-made pasta salads to eat for breakfast/lunch. As a self proclaimed chef I would much rather make my own than buy pre-made salads.  A little part of me smiled when he said he didn't like it. Of course that immediately made me want to make him one he would enjoy! One that would be tasty to him, healthy for me, and of course gluten and dairy free. I believe I succeeded. 


Gluten Free Pasta Salad

Ingredients:

12 oz gluten free elbow pasta
3 T dairy free sour cream
1/2 cup GF mayonnaise 
1 1/2 T apple cider vinegar
1/2 red onion
1 t sugar
1 pint grape tomatoes
1 T fresh flat leaf parsley
4 stalks celery (green part only)
1 t sugar
1 t dry mustard 
1 1/2 t salt
1/4 t fresh ground black pepper 

What to do:

Cook your pasta according to package directions. Drain and rinse under cold water.

Dice your onion.

Remove the white part of the celery.

Cut your celery stalks in half lengthwise.

Line up all the celery stalks and dice.

Rinse your tomatoes.

Cut them in half lengthwise.

 

Chop your parsley.

Grab a large bowl and add in your mayonnaise, sour cream, and vinegar. Mix well.

Add in dry mustard, salt, sugar, and pepper. 

Stir everything together. 

Add in your tomatoes, celery, parsley, and onion.

Mix everything very well.

Cover with plastic and refrigerate overnight.


Before you serve, give everything a good stir. The pasta salad will keep in the fridge for a week.

Banana Week; Banana Chips

It is day two of Banana week. I have a super simple snack that is a little sweet, a little crunchy, and absolutely delicious. It does take a little time to cook these, but worth every minute of it.

I love recipes with super simple ingredients and that is what this week is all about.  Why is it that turning anything into a chip makes it that much better? Add a crunch and I want to eat a whole bag of whatever you will give me. Good thing these are healthy! Just remember, all things in moderation. 

I am semi-embarrased to call this a recipe. It is really a fool proof one. Please note, the bananas won't become crunchy in the oven. They will become a chip consistency once you remove them from the oven and allow them to completely dry on the counter. Enjoy your snack!

Banana Chips

Ingredients:

4 medium bananas
juice of one lemon

What to do:

Preheat your oven to 200°.

Slice you bananas into 1/4 inch slices.

Lay your slices on a parchment lined baking sheet.


Squeeze the juice from your lemon into a small bowl. 

Using a basting brush, brush your banana pieces with lemon juice.




Bake for 2 hours until. 

Allow the bananas to hardened on a drying rack and then store in an air tight container.
