Blueberry Balsamic Chicken

Well, I was frequenting the farmers market again and the blueberries were just calling my name.

I love when fresh blueberries are in season. They have the perfect amount of sweetness with amazing antioxidant properties.

Of course, blueberries are better for you if you just pop them in your mouth raw, but I like to also make them into delicious cooked dishes.

If you cook blueberries down, they aren't quite so sweet and are the perfect compliment for a vinegar based sauce. 

This is an all in one skillet chicken recipe because sometimes I just really don't want to do dishes. Am I right ladies? Okay, lets start dinner!


Blueberry Balsamic Chicken

Ingredients:

2 boneless, skinless chicken breast
2 T buttery spread, divided
1 cup fresh blueberries
1/2 onion
1/4 cup balsamic vinegar
1 T yellow mustard
1/2 t salt, plus more for chicken
dash of pepper
1 T fresh rosemary 

What to do:

Trim any excess fat off of your chicken.

Dice your onion.

Roughly chop your rosemary.

Melt 1 tablespoon of your buttery spread in a large skillet over medium heat. 

Sprinkle your chicken with salt and pepper and place in hot skillet to brown for about 1 1/2 minutes on each side. 


Remove the chicken from the skillet and set aside.

Add remaining tablespoon of buttery spread into the skillet. 

Add in your onions and sauté for about 5 minutes or until slightly translucent. 


Add in your fresh blueberries and sauté for an additional 2 minutes.


Add in your balsamic vinegar, yellow mustard, salt, and rosemary.

Stir it all together.

Bring the mixture to a simmer.

Add your chicken back into the sauce. Cover and allow to simmer for 15 minutes or until the chicken is cooked through and the sauce has thickened.
