I LOVE ENGAGEMENTS!!

Last night we had a couple friend of ours over that is newly ENGAGED!!! Both my husband and I are beyond thrilled these two are getting married. Congrats and best wishes Meagan and William!!

 There is something about seeing a newly engaged girl. They are truly glowing and their happiness is written across their face.  Her fiancĂ© and my husband have been best friends since middle school and lived together all throughout college. I have found such a wonderful friend in Meagan and am excited to begin all of the celebratory activities!

Okay on to the food. I wanted to make something everyone would love that they didn't realize was dairy free or gluten free. Not even sure they noticed!! We divvied up the meal. Meagan brought potatoes that we sliced up thinly, added olive oil, salt, pepper, and garlic powder and baked in the oven at 375° for about 40 minutes. The men took on the grill, steaks all around! And I took on the veggie. I went for a green bean casserole because who doesn't love a green bean casserole?

So here it is for you!

Green Bean Casserole 
Dairy Free, Gluten Free


Ingredients:

2 shallots
little less than 1/4 cup gluten free flour
1 1/4 cup pure vegetable oil
2 T dairy free butter substitute
2 T GF Flour
1 cup sour cream
3 cans green beans drained
1 cup dairy free mozzarella cheese
1 cup sliced mushrooms
splash of dairy free milk

What to do:

Preheat oven to 350°

Lets start with the fried shallots. Cut both ends off the shallots.

Remove outer flaky skin and slice width wise.

Separate the rings of the shallots.

Add your sliced shallots and a little less than 1/4 cup gluten free flour into a small bowl.

Toss to cover.


Add your vegetable oil into skillet and head over medium high heat.

In small batches, fry the shallots until browned. This should only take at the most 2 minutes. Using a slotted spoon, remove the shallots and place on a paper towel covered plate. Sprinkle with salt.

Drain your oil. In the same skillet you used to fry you onions, add in 2 tablespoons butter substitute.


Once melted, add in 2 tablespoons GF flour, stirring until smooth


Add in your dairy free sour cream 

Stir to combine. I ended up adding at little splash of dairy free milk to thin out the mixture.

Add in your green beans and mushrooms and toss to coat.


I got talking to Meagan and I COMPLETELY forgot to toss the mushrooms in. Oops! Guess I shouldn't have tried to multi task. 

Pour your mixture into a baking dish

Top with cheese

Bake for 20 minutes. Add fried shallots on top and cook for another 10 minutes.
