The broccoli recipe I have for you is another simple recipe that adds a
little crunch to your sometimes boring broccoli. Don't get me wrong, I am
someone who eats broccoli raw and loves every minute of it. However, I know
many of you are not like me and would rather have your broccoli smothered in
butter and/or a cheese sauce :) Well, this recipe is for you. No it doesn't
have a cheese sauce but I think it is just as good.
Crunchy Broccoli

Ingredients:
1/4 cup pine nuts
2 small heads broccoli
3 T extra virgin olive oil, divided
1/4 t salt
2 T balsamic vinegar
1 1/2 t dijon mustard
Add your pine nuts to a small skillet.
Toast over medium heat, stirring constantly, for about 5 minutes. You will be being to smell the nuts. At that time, remove immediately. Do not over toast as it will give the broccoli a burnt taste.
Transfer your pine nuts to a plate and set aside to cool.
Wash your broccoli well.
Remove the broccoli florets from the stem.
Add your broccoli to a large sauté pan.
Add your salt and pepper and drizzle with 2 T olive oil.
Saute your broccoli for 12-15 minutes or until browned and slightly softened. Be sure to stir the broccoli periodically.
While your broccoli is cooking, add the vinegar, mustard, and 1 T olive oil in a large bowl.
Stir everything to completely combine.
Add your cooked broccoli and your toasted pine nuts into the bowl.
Stir to combine and dig in!
