Dressing Stuffed Turkey Breast

Even though it has only been a few weeks since Thanksgiving, I still crave turkey and dressing. Because it was 2:00 and I wanted to have turkey and dressing for dinner that night, I created this dressing stuffed turkey breast. There has been a dilemma between my husband and I rather it is called "dressing" or "stuffing." I have always called it stuffing but that is because it was actually stuffed inside the turkey to cook. I have always thought stuffing was more of a crumbly bread consistency and dressing is more of a smooth texture. Hence why this recipe is "dressing" stuffed turkey.

Who knows what is right and wrong, but either way, this recipe is delicious and will take you back to the Thanksgiving table and remind you of all we should be thankful for throughout the year.

Dressing Stuffed Turkey Breast
gluten free, dairy free

Ingredients:

2 boneless skinless turkey breast
1/2 small onion
1 celery stalk
1 fresh green onion
1 cup gluten free bread crumbs
2 T butter substitute
1 T minced fresh sage
1/2 T dried oregano
1 large egg
1/4 t salt
1/4 t fresh ground black pepper
1/2 cup gluten free chicken broth
Cooking twine

What to do:
a quick helpful hint: I chose to grill the turkey breast, but you can actually bake this recipe as well. Just bake at 350° for about 40 minutes.

Preheat your grill to 350°.

First we have to get your dressing ready so we can stuff it in your turkey breast. Chop your onion, celery, and green onion.

Lightly beat your egg

Place your bread crumbs in a medium bowl.

Melt your butter substitute in a medium sauce pan of medium high heat.

Add in your chopped onion and celery. Sauté for 10 minutes or until onions are translucent.

Add in your sage and chopped green onion and continue to sauté for an additional 2 minutes.

Add your vegetable sage mixture to the bowl with the bread crumbs. Stir to combine.

Pour in your egg, oregano, salt, and pepper and stir. Add in your chicken broth and stir to completely combine. If your mixture looks a little dry, add in additional chicken broth 1 T at a time. You do not want the mixture to become soggy.

Now get your turkey breast ready. Trim any excess fat. Slice the middle of the breast length wise to create a pocket without cutting all the way through the bottom or either side. Sprinkle with salt and pepper.

Stuff your turkey breast with your dressing.

Using your cooking twine, wrap around the breast to hold the stuffing in.

Grill for about 20 minutes with indirect heat or until no longer pink. Turning half way through.

Happy Eating!
