Healthier Choclate Cupcakes

First things first.. HELLO!! I am so sorry I have not blogged in so long. However, it was for quite a good reason. Hubs and I welcomed our first child at the end of February and I have still yet to make it to the grocery. I am very thankful for my mother-in-law and husband. They have been lifesavers to find my random items that I must have :) 

I finally had to time to come up with some recipes and I am ready to get back to blogging. I figured I would start with a few sweet treats that I took to my OB when I went to my 6 week checkup. My OB's office has truly been amazing through the pregnancy and postpartum time, so I wanted to give them a little thank you. (of course my Hubs will benefit from the baking too.)


So because I am nursing our little girl, I have had to add back ingredients to hopefully prevent future allergies. I am currently trying to add little bits of dairy at a time so some of my recipes do include dairy. I have actually put gluten back in my diet for personal reasons. I will continue to share some recipes that are gluten free, but all of the recipes I blog will not be gluten and dairy free. I will be sure to specify for all you gluten free people who so faithfully follow my blog. You would be surprised how many recipes are actually unintentionally gluten free.

Okay on to my first recipe back. Not sure if this is true, but I am blaming my new found sweet tooth on nursing. Y'all, it is out of control, so I was determined to create some healthier options to take take of that lingering sweet tooth. I ended up adding a simple icing made of 1 cup confectioners sugar, 1 T softened butter, and 1 t almond extract. Just add ingredients into a bowl and mix until well combined and icing comes together. I was in a bit of a hurry to finish up before the baby got hungry, so I forgot to snap a pic of them when the icing. Sorry! I will get better at this, I promise! 

Healthier Mini Chocolate Cupcakes

Ingredients:

3/4 cup whole wheat flour
1/2 cup packed brown sugar
4 T unsweetened cocoa powder 
1/2 t baking soda
1/4 t sea salt
1/2 cup cold water
1/4 cup unsweetened applesauce
1/2 t apple cider vinegar
1 T butter or butter substitue, melted
1/2 t almond extract

Preheat oven to 350°.

In a large bowl, add flour, brown sugar, cocoa, baking soda and salt.

Stir until combined.

In another medium bowl, add remaining ingredients. 

Mix well.

Pour the applesauce mixture into to flour mixture bowl.

Stir everything together. 

Fill mini cupcake pan with liners.

Fill the muffin's half way.

Bake for 8-10 minutes, or until a toothpick inserted in the center comes out clean.Let cool completely before icing.
