Panini are such a quick and easy go to meal that I absolutely love. One problem.. the bread and cheese. Well, now that gluten free products are widely available, making GF panini are SUPER easy! I love onions so I made a red onion relish to add to our panini. Because my husband is so sweet and deals with my GF, DF meals night after night, I made him a full of gluten, full of dairy version while I stuck to my allergy free version :)
If you don't have a panini press, you could always make these in a griddle pan, or even the oven but you just won't have those "panini marks" on the bread :)
Italian Panini
GF, DF
Ingredients:
2 slices GF, DF bread
GF, DF cheese alternative (I used provolone but you could do mozzarella style)
GF pepperoni
GF ham
GF salami
2 T extra virgin olive oil
1 T red wine vinegar
1/4 cup black olives
1 T fresh oregano
1/2 red onion
dash of salt and pepper
What to do:
I start with the relish in this recipe because I needs to marry in the fridge for about an hour. Finely Chop onions, and black olives and roughly chop your oregano.
Add all chopped ingredients, olive oil, red wine vinegar, salt and pepper to a medium bowl.
Stir to combine.
Cover with plastic wrap and place in fridge for about an hour so the flavors come together.
Now on to getting the panini built. Get out your panini grill if using. place your bottom piece of GF bread right onto the grill.
Begin to layer your ham, salami, and pepperoni onto bread.
Top with your red onion relish.
Add on your cheese.
Top with your other piece of GF bread.

Close your panini grill top and turn on to the "panini setting" or over medium heat if using a griddle pan.
Let cook for about 10 minutes or until you have those nice grill marks on the bread and your cheese is melted.
That's it! Now take a big ole bite and enjoy.
