There are some days I don't plan on cooking for whatever reason. Then my husband calls on the way home from work and asks "what's for dinner?" Then off to the grocery I go. Nothing planned ahead of time, just creating a recipe as I shop the aisles at Publix. The end result is often a super easy throw together meal. So here is another easy gluten free, dairy free recipe for supper!
Chicken and White Bean "Stir-fry"
Ingredients:
1 1/2 T extra virgin olive oil
about 3/4 lb chicken breast tenderloin
1 can white beans (reduced sodium)
1 can whole kernel sweet corn
1 1/2 T garlic powder (divided)
1 1/2 T onion powder (divided)
1 T crushed red pepper (divided)
1 shallot
1 medium tomato
1 t Salt
1 t Pepper
1 T fresh parsley
First step is to dice up the chicken in 1 - 1 1/2 inch pieces.
This is why I like to use the tenderloins rather than full breasts. They are perfect to cut bite sized pieces.
Toss in a saute pan with the olive oil, 1/2 T of the crushed red pepper, 1/2 T garlic powder, and 1/2 T onion powder.
Saute for 5-7 minutes until almost done. Don't fully cook just yet.
While the chicken is cooking, chop up your veggies and rinse your beans.
Toss your shallots into the pan with the chicken and let cook for 1-2 minutes.
Now add in your corn, beans, and tomato and stir together.
Add in your remaining crushed red pepper, garlic powder, onion powder and salt and pepper.
Top with your chopped parsley once you get it on your plate.
We had a nice green salad with some gluten free Italian to accompany our stir fry.
I also served this with Udi's french bread for a little gluten free crunch on the side :) If you aren't familiar with Udi's, I highly recommend you become friends. They have some wonderful options for gluten free people like myself!
