Healthy Takeout at home!

Okay lets just all be honest for a few minutes. Who doesn't love fried rice? I LOVE it! What I don't love is how absurdly unhealthy it is from a chinese restaurant. It is loaded with MSG, sodium, and fat. Chinese take out has given fried rice a bad name for most people, but I am here to show you it can be healthier when it is prepared at home. 

I try not to eat much soy sauce, but I believe everything is okay in moderation so tonight I am using up my soy moderation :)

Gluten Free, Dairy Free Healthy Fried Rice


Ingredients:

2 1/2 cups water
1 cup uncooked brown rice
 3 T canola oil
1 cup bean sprouts
1/2 yellow onion
1 small head of broccoli
3 green onions
2 eggs, scrambled 
1 package frozen peas and carrots
dash of salt and pepper
1/4 t toasted sesame oil 
3 1/1 T gluten free soy sauce

First off, get your rice cooking. Brown rice takes anywhere from 40-50 minutes so you want to get this started a little over an hour before you are looking to eat. Bring your water to boil and add in your rice. Bring it back up to a boil and then lower your temperature and simmer the rice until all the water is absorbed. Set your rice aside and let cool.



While your rice is cooking, we will work on the rest. Lets get those onions and broccoli chopped.




Heat a large skillet over high heat for about 2 minutes. I like to use cast iron for this recipe. Once your skillet is hot, add in your canola oil. Toss in your bean sprouts, yellow onions, and broccoli.

 Mix well. Sauté for 5 minutes. 

Add in your cooled rice and stir to combine. Cook for 5 minutes, stirring constantly.


Make a hole in the middle of your rice. Add in your scrambled eggs and allow to cook. Then toss in your green onions, peas and carrots, salt, pepper, sesame oil, and soy sauce. If you don't eat eggs, its always an option to simply leave them out. 


Stir to combine. Cook until the eggs are completely cooked.

Serve immediately.
